hi again - March has lifted me out of the deeeep funk I found myself in this winter. and so here I am, writing to youuu 💌
updates
This California girl misses the sun and the ocean and summer. I’m craving a tan to last me all year long, a corona and lime, and a good read.
Instead, I’m sitting in a co-working space, waiting for the rain to settle in for the weekend. The bright side: the rain in NYC has been quite romantic.
Work has been taking everything from me, and I’ve fought to make my mornings, breaks, and evenings worthwhile. I’ve found immense solace on the treadmill and in the company of others. My sweet spots for ‘play’ time this winter have been exploring art exhibits and hopping around bars with indoor games (ping pong has been my favorite).
I’ve also cut down my WFH time to once or twice a week (particularly driven out of my apartment by a black mold scare). I’m connecting with new and old friends, I’m reading more, and channeling my inner-child as much as possible. Overall, I’ve tried to keep things simple and silly.
I’m not sure if it’s everything above, the change in weather, the phase of the moon, or sheer luck— but I feel like a page has turned and my days are feeling lighter and brighter.
Or, perhaps, I’m learning to cope with (and embrace) this chapter of adulthood [gasp].
soup season - part two
surprise— soup again! I made this for the first time after a particularly rough day at work. It was quick, it was delicious, and most importantly, it quieted all the scary thoughts/feelings I had simmering at the surface.
sauté onion and garlic
add in a 28 ounce can of crushed tomatoes (I had a large can of whole tomatoes and just blended)
add two cups of broth (veggie or bone or chicken or whatever you’ve got)
bring to a boil!
season with your heart - I used garlic salt, oregano, chili flakes and S+P (italian seasoning would be good, too!)
once boiling, add in heavy whipping cream (about a cup or so)
add cheese tortellini (or whatever you like best)
add in veggies of choice, or don’t! the original recipe that inspired this soup doesn’t call for any, but I went with petite peas and kale :)
bring to a simmer
The original also called for italian sausage or ground beef, you could add that in (cooked) before the torts.
coming soon: granola! I haven’t yet perfected my recipe, but it’s been such a wonder to make my own. I eat yogurt basically every day and have become quite the stickler for the ingredients added in. coming to your inbox asap!
